Club Sandwich with Avocado & Truffle Cheese

Serves 6

18 slices of crustless sandwich bread
13 oz of sliced cooked chicken
16 lettuce leaves
3 tomatoes
2 avocados
1/2 lb of Fromager d’Affinois Truffle cheese
whole grain mustard

Preheat the panini grill or griddle.  
Toast the sandwich bread slices.
Peel and cut avocado into slices.
Slice the tomatoes and shred the lettuce.
Mix the mayonnaise together with the mustard.
Cut the cheese into slices.

Assembly: Divide the tomatoes and avocado and half of the lettuce over 6 slices of sandwich bread. On the remaining 6 slices of sandwich bread, add the rest of the lettuce, the chicken and the slices of Fromager d’Affinois Truffle cheese.

Stack one dressed slice on top of another, then top with a plain slice. Secure with one or two toothpicks. Cut into halves or quarters. . ?
