A Plant Based Girl’s Guide to Breakfast!
They say it is the most important meal of the day, but what are you supposed to eat when you’re not eating eggs, cheese, yogurt or buttermilk pancakes?
Me personally, I like to start my day with a green smoothie. I throw frozen mango, banana, peaches, strawberries, blueberries etc. into my Vitamix blender with spinach, kale, watercress or any other leafy green. I often add turmeric, ground flax seed or hemp seeds and sometimes a stick of celery or cucumber. Top it off with water and blend! Any combination of fruit and greens will work so try out different combos!
TIP: Save spaghetti sauce jars so you can take your smoothie to go!
While a smoothie can be filling, for me it is not enough. I also like a slice or two of sprouted grain toast (such as Ezekiel bread) topped with a nut butter (usually almond or peanut). I often add sliced banana, fresh blueberries or sliced strawberries as well. Again, anything you like goes so have fun with it. Always sprinkle on some cinnamon or cardamom for added antioxidants and flavor. This makes a great sandwich on the go to!
If I don’t have my toast, I will sometimes have oats or another whole grain cereal such as Barbara’s Bakery cereal. Here again I like to add fresh fruit, almond or soy milk and sprinkle of some cinnamon or cardamom and nuts or seeds to the oats. Breakfast as a plant based girl is basically a mixture of whole grains, fruit, nuts or seed and greens.

Plant Based Blueberry Pancakes
1 cup whole wheat flour
1/2 tsp salt
1 tsp cardamom
1 tablespoon baking powder
1 cup non-dairy milk
2 tablespoons real maple syrup
½ cup fresh or frozen blueberries
4 oz applesauce
Add mixed wet ingredients into dry ingredients. Don't over mix! Set aside for 5-10 minutes. It will puff up a bit! Mixed in the blueberries (or any fruit you choose) and cook 'em up with minimal oil (about 1 tbsp for the whole batch)
